Description for Gite
"Les Caselles: A Historic Farmhouse on the Causse, Embracing Sustainable and Quality TourismDiscover the rich history of our 17th-century farmhouse, "Les Caselles." Nestled in the heart of the Grands Causses Natural Park, this authentic Aveyron building showcases the craftsmanship of the renowned builders from the nearby village of Saint-Beauzely, who expertly utilized sandstone quarries.
Located near Millau, the Gorges du Tarn, and the Larzac plateau, Saint-Beauzely holds historical significance as the birthplace of the builders responsible for fortifying the Templar and Hospital cities, such as La Couvertoirade, La Cavalerie, and Sainte-Eulalie de Cernon.
Once a thriving Causses farm in the charming hamlet of Azinières, Les Caselles played a vital role in the production of the renowned Roquefort cheese. At its peak, the farm spanned over 400 hectares, allowing sheep to graze on the nutrient-rich Causse Rouge, home to exceptional flora.
However, as time passed, the farm fell into disrepair under tenant farmers who struggled to maintain its traditional operations. Neglect and lack of renovation posed a threat to this proud Caussenarde building.
In the year 2000, a visionary buyer embarked on an extraordinary renovation journey, with the initial vision of creating a farm inn, thus bringing the tourist project to life. It was then that the first travelers had the opportunity to experience the wonders of Les Caselles.
Today, in the winter of 2020, Mikaël and Alizée Pélégry have decided to revolutionize their lives. Their mission: to promote quality and ecological transition for sustainable and responsible tourism.
As a former director of a Parisian theater, Mikaël's reflection on life priorities was prompted by the major performing arts events of 2015. Moreover, the birth of their daughter and their desire to provide her with a unique living environment ultimately convinced them to start anew in Aveyron, the birthplace of Mikaël's family.
In the face of environmental challenges, Mikaël and Alizée set themselves the ambitious goal of transforming this old farmhouse into an eco-friendly, low-energy home. Through the expertise of local companies, the energy consumption of the building, which houses five top-of-the-range guest rooms, a charming gite, and various communal and private areas, is comparable to that of a single-family home.
Today, they take pride in alleviating their customers' guilt and promoting responsible tourism by offering high-performance, eco-responsible equipment. Whether through small gestures or major renovations, their daily reinvention includes changing the heating system, converting all lights to LEDs, utilizing rainwater, installing solar panels, and providing a charging point for electric vehicles – every action counts towards their sustainable and responsible approach to tourism.
The table d'hôtes also adheres to these principles, with a commitment to sourcing fresh, local, quality products from short circuits. This allows guests to discover the richness of our Aveyron region and meet our exceptional local producers.
Ultimately, Mikaël and Alizée aspire to provide guests with the warm and genuine hospitality of an authentic Aveyron house, aiming to become one of the finest guest houses in the region. Their dedication to friendliness and quality sets the standard for offering each visitor a remarkable experience.
This "slow tourism" project invites everyone to Aveyron for picturesque, active, and environmentally conscious holidays!"
